This is a unique and rare coffee and we are delighted to offer it to you. FLAVOR NOTES: Raspberries, Wild Raw Clover Honey, Aroma of Fallen Apples on Warm Grass, Raspberry Dark Chocolate & Fresh Hops If you want some backstory, you can read my RANT! The only ingredient in our coffee is coffee. Always and forever. We add nothing and the flavor notes are just the magic already in the bean that we tease out through meticulous roasting. ROAST: Delicate/Light REGION: Quindio, Colombia 1400MASL VARIETALS: Pink Bourbon PROCESS: Natural, Fermented, Sun Dried ETHICS: This sustainable coffee is sourced from family farms with a multi-generational history. If you're into wild fruit notes and an unforgettable coffee, this is it. The flavor notes are: raspberries, wild raw clover honey, aroma of fallen apples on warm grass, raspberry dark chocolate & fresh hops. All coffees go through a fermentation phase and most are less than 72 hours. Meanwhile, this anaerobic fermentation goes on for 360 hours! The results are memorable and delicious!! PINK BOURBON BREW RECIPE WILDERNESS VERSION: Fill the grinder once. 30 seconds off the boil for your temperature. At 1700M/5000FT or above, skip the waiting and brew immediately. Four pours with the first being slightly smaller to fill a 12oz insulated mug. In colder weather, abandon any waiting and brew swiftly filling the brewer as high as you can until the mug is full. Cap it and let the remaining coffee drip into a second cup, sometimes called the desperation cup. HOME & CABIN VERSION Weigh and grind 21G Brew water temp 96C/205F on your digital kettle. Pour recipe: 60G first pour, wait 45 seconds, 90G second, third and fourth pour until dripped through each time. Total brew time: 3 minutes. Adjust grind fineness to hit this target. We find this recipe vs our standard three pour recipe highlights the fermented notes with apple aroma.
