We’ve reached out to the individuals at Red Fox Coffee Merchants for this lot, which comes from the Eastern Mexican state of Veracruz. José Cienfuegos, the producer, has a small farm near the town Huatusco, just north of the city of Córdoba. He cultivates Bourbon and a variety called Garnica, which is a hybrid of Caturra and Mundo Novo. Both of these are dwarf mutations of the Bourbon variety. This coffee has an excellent cup profile similar to Caturra and Catuai. José’s farm is located at 1350 meters, which is quite a bit lower than many other coffees we purchase; however, the weather is still very cool, and the effects on the ripening of the fruit are nearly identical. This coffee is de-pulped, fermented overnight in a cement tank, then mechanically dried. We hope you like this unique coffee!
