Thrilled to bring another H1 from La Huella on our offerlist to go along with the H1 washed! This one in Rare is a very special stalled natural! This exclusive process was coordinated directly with Ben and the La Huella team. After having conversations with Ben about his experience with this processing technique with other producers they decided to give it a try in 2021, and the results were impressive! Now in 2022, we have commissioned a special lot of a Stalled Natural H1. After the cherries are picked, floated, and sorted, they are laid to dry and carefully moved 3 times a day. They are dried under 100% sunlight for 12 days until the humidity reaches 15% - however every afternoon when the temperature cools, the cherries are bagged into Grainpro bags and tightly sealed to prevent moisture from entering. Once the desired humidity was reached the coffee was once again bagged into the Grainpro bags to "stall" the humidity at 15% inside of their well-ventilated warehouse. Once the stalling period was completed the coffee is left to continue drying until the humidity drops below 12% The result of this is delightful yellow fruit notes such as canned peaches alongside a balanced combination of cocoa nibs and apple compote!
