Meet our Mexico Las Trincheras! Las Trincheras is the name of the farm in Veracruz, Mexico, owned by renowned producer, Jose Cienfuegos, where he and his team produced this coffee. The lot is made up of Bourbon and Garnica varieties. You may be less familiar with that second variety - its a hyrbid of Mundo Novo and Caturra, pretty much exclusively grown in Veracruz, Mexico and still making up a relatively small amount of lots from that region at that. This a washed process coffee, but mechanically dried, with a dry fermentation performed in concrete tanks. This coffee was produced with such care that the resulting cup is super vibrant, while still being exceptionally clean. It's a great example of the vibrancy that can still be achieved through care and precision in all steps of the work at origin, without needing a more wild, multi-name processing method. It's super juicy and fruit forward. Look for notes of sweet blackberry, with pops of tart Kiwi fruit, and sweet melon notes like Cantaloupe.
