"Honey Processed" or dried pulp coffee is prepared by removing the fruit from the seed and then allowing the beans to sun dry without washing. This finishing leads to a complex coffee, fruitier than a traditional washed coffee but lighter than a full dry process. This excellent example of honey processing from Finca Linda Vista demonstrates bright, crisp fruit aromas with a smooth and balanced cup.
