This Brazilian pulped natural from Edson Morais de Barros is another beautiful Brazilian coffee as we know it. It is full and creamy and you will find beautiful chocolate tones in both the aroma and the taste. The super floral, almond aroma gives this coffee its own character. When Edson Morais de Barros bought the Pe de Cedro estate in 2012, it was already known for producing high quality coffees. As the current owner of the estate, Edson continues to build the reputation of the farm and the Mantiquiera de Minas region. He works closely with the team of agronomists from COCARIVE and the Brazil Specialty Coffee Association to produce coffee that meets the highest quality standards his farm can offer. The agronomists advise on machines and processing methods and innovations in the field of coffee cultivation. Pe de Cedro produces coffee in line with the “Best Coffee Practices” and traditions in the region that gives Mantiquiera de Minas the “Protected Geographical Indication” (PGI) certificate. This means that the estate uses environmentally friendly techniques and approved coffee varieties. Unlike many farmers in Brazil, the entire harvest on Pe de Cedro is picked by hand. One of the essential parts of harvesting is that the coffee cherries are processed on the same day immediately after picking. Pe de Cedro uses a classic Pinhalense machine for pulping. This removes the pulp and almost all the mucilage from the parchment. The parchment is then left to dry on patios. The quality team spread the parchment in a thin layer to dry. They keep a close eye on the drying process and regularly rake the parchment so that the beans dry slowly and evenly. When the coffee is dried to a moisture content of 12%, the parchment is moved to wooden containers in the storage area. Here the beans undergo a necessary rest period to stabilize the moisture content in the beans. A month later, the beans are sent to COCARIVE department stores in Carmo de Minas for storage. COCARIVE also carries out several quality checks.
