This year's Holiday coffee is the result of months of effort to create a cup filled with joy. We worked with our close friends, the Ariz family, to create a natural process coffee - a rare find in Central America. Bourbon varietal coffee cherries are grown at the Ariz's Cup-of-Excellence-winning farm, Finca El Aguila, in Ahuachupan, El Salvador, at 1700 meters. The Ariz family has the best cherry selection process we have seen anywhere in the world: only the darkest, holly-red coffee cherries are hand-picked at peak ripeness. This leads to a sweeter cup with bold fruit notes. From the farm, the cherries travel by truck to Apaneca, a town about one hour away, where the Silva family operates Sicafe. Sicafe is doing some of the best processing in El Salvador, and for our Holiday 2020 offering, they slowly dried the bourbon cherries on raised beds in shade for over a month. This process pushed ripe fruit flavors into the coffee bean, resulting in a lush and vibrant cup.
