We’re thrilled to bring this small holder community lot to our lineup, featuring one of our favorite varietals, Typica de Pluma. As the story goes, the grandparents of many present day farmers in Mexico’s Sierra Sur worked on large estates in the area, taking seedlings home after the harvest and planting them in their small communities as a cash crop. This specific sub-varietal of Typica grows a bit taller and leaner on steep terrain, featuring many 30+ year old trees. In the last decade, small town producers are capitalizing on the hype surrounding this one of a kind varietal, known for its superior quality and limited availability. Noteworthy is the return to de-pulping into wooden fermentation tanks by Pompilio & Sanson Garcia Luna, two brothers of Zapotec heritage who do the wet milling for this community lot. They’ve noted higher cup quality over tiled tanks, perhaps from the more vibrant microbiome in the wood.
