The Pink Bourbon variety has quickly earned a reputation for its juicy, citrus-forward profile — a combination of bright fruit complexity and balanced sweetness. Believed to be an Ethiopian landrace, Pink Bourbon beautifully blends the signature vibrancy of Ethiopian coffees with the famed terroir of Colombia. The second trend is the anaerobic washed process, a meticulous method that enhances flavor intensity and can even bring out new dimensions in a coffee’s profile. While this technique can sometimes lead to “funkier” flavors, this lot stays clean, expressive, and refined. Brewed in a V60, you might catch a whisper of the process’s depth, but the overall experience remains fruity, sweet, and dynamic without ever tipping into excess. We were able to source only a small number of bags of this exceptional coffee. It’s a cup that bridges two innovations (varietal and process) into one harmonious, classically delicious expression of what makes modern coffee so exciting.
