About This Coffee

An old friend makes an appearance on our shelves again! Coffees from the Las Lajas Micromill are beloved by the specialty coffee industry for decades for their leadership in microlot production and coffee processing innovations. Perla Negra is a natural processing method developed by the Chacón’s. The ripe coffee fruit is dried on raised beds for a week under the sun then rested in the shade. After the shade drying period, the beans are transferred to a greenhouse to continue the dehydration while being moved twice a day. This drying process is very long and results in deep berry flavors and wine like acidity. Fun fact: Perla Negra is the first microlot that Brioso ever purchased back in 2008! These coffees were created out of thinking creatively in a difficult situation. An earthquake cut off electricity and water to the mill during the harvest season forcing Francisca and Oscar to pivot their plans. Taking inspiration from coffee processing in Ethiopia, they built raised beds and created their first natural processed coffees, of which Brioso is proud to have purchased! The rest is simply history and we’ve been loving Perla Negra and all the wonderful coffees from the famed Las Lajas micromill for years and years.
