We designed Espresso Proper to be the slightly more “modern” counterpart to Clutch. We source fully washed coffees from Guatemala and Ethiopia to develop an espresso profile that is brighter and more fruit-forward. These components change seasonally, so we’re constantly sourcing and assessing different coffees to utilize in this blend as new lots become available to us. With notes of Citrus and Melon, Proper is great for baristas and cafes who gravitate towards coffees with a lighter body and more enticing acidity. These bright flavors from the Ethiopian component balance perfectly with the sweetness and body from the Guatemalan. We enjoy Proper with a slightly longer ratio of 1:2.5 17 grams in / 42 grams out in about 28 seconds.
