The coffee's sweet notes taste like caramel and chocolate. The acid is light and delicate and brings to mind honeydew melon and citrus fruits. It is a perfectly balanced coffee that feels both silky soft and super crisp at the same time. A medium roasted coffee everyone can drink. Aeropress brings out the best in Santos' coffee. But it is also good for filter and pour over coffee. Santos Isabel lives on top of a mountain in northern Nicaragua, near the border with Honduras. Together with his family, he runs the coffee farm Finca San Isidro, which has a more technical approach to coffee production compared to other coffee farmers in the area. Several of Santos' sons are engineers, and Santos himself is a firm craftsman. Together they have built a wet mill that cleans and sorts the coffee beans on the farm. The mill is unique and we have not seen anything like it in the area. That, and all the other hard work that Santos and the sons put into their coffee production, helps to ensure a clean and balanced coffee.
