1/2 of the Ethiopian "twin duo" is the morko-processed Heirloom variety from the Congo region. It brings to mind Sencha light green tea, grandma's peach jam and almost forgotten wild strawberries. Heirloom is an unspecified variety, or a mix of many different varieties, which consists of cherries collected from areas adjacent to the processing station - in this case, we are talking about the Congo microregion. They are often provided by small farmers who, apart from coffee, grow many other plants and fruits, but also by pickers who collect ripe, wild cherries. In the mill, they go through a flotation process, careful selection, and then dried for 15-20 days until they reach the desired humidity.
