About This Coffee
This is our first year buying from Cafe Capitan, a two-year-old producer group from Chiapas, Mexico’s southernmost state which borders Guatemala. They work with farmers in the pueblos of Comunidad Monterey, Santerita, Laguna del Cofre, Capitan, and Las Pilas. The profile is approachable to most preferences with abundant natural sweetness and a balanced overall profile. Don’t let the unfussy characterization fool you: the quality here is solid, with the Capitan group focusing heavily on high-quality production since breaking off from a larger cooperative to pursue higher standards. As always, the hope is that the exceptional, organic certified lots will fetch higher prices and help boost profitability for the communities who participate. This “Especial” lot is their top quality selection for the harvest.
