About This Coffee
Fully ripe cherries were de-pulped using a Penagos eco-pulper. The coffee was then fermented for 12 hours before being removed to dry on drying tables. Roaster's notes: This coffee is minimally processed. We roast this hard and fast (post-soak) to try and preserve the acidity in this coffee. If you drink this immediately post-brewing, it'll taste like nothing. This coffee is that delicate. Once it drops to room temperature though, the brew starts to express sour and tart grape qualities. If you like clean coffees, this would be a good coffee for you. Brewing Notes: V60. Water temp: 95C+ Brew recipe: 0. 18g grounds1. 60mL bloom (for 40 seconds)2. 60mL second bloom (for 40 seconds) -- use a small spoon to stir as the brew sits3. 180mL pour (to 300mL) -- apply light swirls if grounds are sticking to the brewer sides You should be at around 3 minutes drawdown. Don't go too fine. You'll start muddying the acidity. Rest notes: 2-3 weeks+.
