A experimental processing technique delivers a flavour explosion from the coffee of over 1100 smallholder farmers. Muraho Trading Company’s Rugali has become as impactful example of a successful washing station and this new technique demonstrates their expertise. Five Senses is stoked to offer another exceptional lot from social enterprise, Raw Material and their Rwandan partners, Muraho Trading Company (MTCo). This lot makes use of quality, high grown red bourbon varietal, fermentation occurring in an anoxic (zero oxygen) environment, achieved by placing a ‘pillow’ of water over the ripe cherries. The water stabalises temperatures during 48hrs, after which the coffee is pulped and laid out on raised beds to dry for ~2.5weeks. The results from these experienced operators is a unique medley of blueberry muffin, star anise and bubblegum sweetness. Enjoy!
