Elegance in pure form. On Pablo Muñoz’s farm, the cherries are picked and then sorted by hand. A quick washing is then carried out to keep the fermentation free from impurities. Fruit fermentation in GrainPro bags lasts 30 hours, then the beans themselves ferment in the bag for another 30 hours, just to be washed twice after. Post processesing, the beans are dried on the farm for 18 days. When the coffee reaches the appropriate humidity level, it is packed and waiting for a transport. For me, this coffee is a masterpiece: an image of what coffees taste like during competitions. Clean, juicy with lots of floral plants. Total cutie.
