For lovers of extreme coffee sensations. For lovers of "tweaked" coffee flavors, which often come from natural processing. In this one you will find a lot of fruit - mainly forest - lots of cocoa and alcohol notes. Infusion with a very high intensity of flavor and expressive acidity. The fruits (arabicas :) were grown on the El Silencio farm in the Cauca region, and the farm belongs to Robinson Rivera, who has been dealing with coffee for 18 years. Robinson belongs to the ACC cooperative, which deals with improving the quality of coffee grown by local farmers, better commercialization of crops, improving the living conditions of farmers and protecting the environment, as well as activities for peace in the region. The cooperative includes 77 farmers who decided to associate in this organization to fight poverty and conflicts. The El Silencio field is located at almost 1900 m above sea level and only the Castillo variety grows here. After picking, the fruits are placed in special tanks, where they are fermented for 48 hours and then dried at 28 degrees - drying takes place in controlled conditions, in special silos, with temperature and humidity measurements. But this is not the end, because Colombians love "playing" with processing and all kinds of experiments :-) Here, the fruit goes back to the tanks to ferment a little more, and finally they are dried on roofed drying platforms.
