Jose Alfredo goes by Fredy, and it was his father Don Abel that inspired him to work in agriculture. Don Abel was focused on growing vegetables, but in the early 2000s he became interested in growing coffee because some of his neighbours had started to do so. Don Abel and Fredy first sowed Pacas and then Pacamara seedlings on their coffee farm. Fredy remembers that it used to be easier to grow coffee. Now the climate is less predictable and there are higher incidences of coffee plant diseases. However, through the years he has learned much more about processing. Little by little, he bought his first de-pulper, he constructed beds to dry coffee, and he learned about washed, honey, and natural processing methods.
