We introduce Santa Rosa Farm from the writings of Mr. Kadokawa, an importer of "COYOTE" who is passionate about El Salvador's specialty coffee and introduced these coffee beans to LiLo Coffee Roasters. It is located in the mountains of the San Ignacio district at an altitude of 1500m to 1700m. Because of its high altitude, the temperature difference between night and day is large, making it suitable for growing high-quality coffee. (If it is too high, the temperature drops too much and coffee does not grow well, so about 1800m is considered the limit for this climate.) The main variety grown here is the Pacamara variety, which is highly regarded worldwide. It is a forest-like farm with many tall trees such as pine trees planted in addition to coffee trees, and these trees provide moderate shade and keep it cool during the day. In addition, excessive photosynthesis is prevented, so the coffee grows slowly without stress. The fruit also ripens slowly, so it accumulates a good amount of sweetness. Then, during harvest time, skilled pickers carefully pick only the perfectly ripe cherries, one by one, and then select those that are at the ideal level of ripeness.
