Our Descaffeinated Mexico, the proposal for caffeine bigots who still deserve to drink specialty coffee. It is a coffee from Pico de Orizaba where the natural decaffeinated method without chemicals called Swiss Water is made. This process does not use solvents to decaffeinate green coffee beans, as its name suggests, was developed in 1979 in Switzerland. The delicate process of removing caffeine begins by using a green coffee extract (ECV) and our exclusive carbon filter system. CVD is oversaturated water with the soluble components of coffee, except for caffeine. The grains are kept in extraction tanks where the CVD flows over them. Looking for balance, caffeine begins to move from coffee beans to ECV. Meticulously controlling the weather, temperature and flow, the result is a net extraction process by which only caffeine is eliminated, leaving intact the characteristics of the coffee flavor according to its origin. Once the grains are decaffeinated, they are removed from the tanks where they have been kept, are dried, packaged and tagged and are ready to be roasted. This is how our decaffeinated specialty coffee ensures you have a caffeine concentration of less than 0.1%.
