The 320 members of the Koerintji Barokah Bersama Cooperative live and farm on the plateau that sits at the foot of the Mount Kerinchi in the island of Sumatra. Cooperative is managed by Truyono, who leans members in processing. Almost all farms in cooperative are small, between 0.5 to 2.5 hectares. With this anaerobic lot, coffee is first floated and separated by density. Then ripe cherry is collected and sealed in airtight 20kg plastic bags that are stored in a cool, dry location for 7 days. Then, after 7 days, cherry is again laid on raised beds to dry for 20-23 days. When dry, coffee is milled and sorted by hand. This lot is very funky, so if you like sweet and fermenty coffee, grab a bag. Notes of cherry, wine will work amazing on filter.
