Their 1.5ha farms are on the sides of a deep canyon that drops down to the CAUCA RIVER, where warm air currents become trapped and offset the chill of the very high elevation. Beans are denser and sweeter as they ripen slowly, developing stonefruit flavours and a light sparkling acidity.
