The Restrepo family, is located near Chinchina, a town of the region of Caldas, its farm el Jardin, is composed run by Juan Felipe, a second generation coffee producer, who has studied to become a processing specialist, which has been a game changer for their success, also they run several projects next to our farm El Vergel. This natural anaerobic coffee was processed in a 2 step fermentation protocol, which consist in developing a thermal shock between the first short fermentation followed by an extended low temp fermentation, and dried mechanically.
