Yooooooooo. I don't think we've ever put on the website or for retail a Sulawesi. This is exciting in a way. Sadly there's a crazy limited amount of this I was able to acquire. Good news is it's enough for most everyone. To me this is "fun". As hard as I go on the Ethiopia Natural coffee lane I think detours need to happen because they don't hold the keys to heaven. I get an insanely weird taffy - maybe strawberry maybe blueberry like flavor. But not in a weird chalky taffy way it's like a cross between gum and the lightest taffy you've ever had. I also get tropical fruits. I want to say mango's but my sense is it's more green like. Maybe a melon or guava. I don't know. There is that generalized earthy tone from the indonesia overall characteristic. You can read that as sort of a dirty processing or how I perceive it. I may be totally wrong on that front. It add's though. It doesn't detract. The fruits and taffy and sweetness mixed with a solid body really do make this at least an all star in the dry process world with the bonus you don't get that wild acidity from an Ethiopia we all know and love. Sometimes it's cool to take a break. Caveat here: this coffee has some wild water chemistry. I roasted this thing mega light but a few beans came out a bit scorched. You rarely see that and especially on the new Giesen which is the king beast of consistent beans. What am I saying? You may see some oils developing. Pull those aside or just let them stay, I don't think they'll detract a ton from the cup. It's "character".
