We're suckers for an acidic, fruity coffee at Rebel (v.) and this bean delivers. This cup has berry-forward flavor with chocolate tones and as it cools you'll get some dry fruit and fermented notes. Hundreds of farmers in the Ngororero region of Rwanda deliver their cherry to the Ngororero processing site. They produce mostly wet process coffee at this site, but also process a nominal amount of naturals too - and we love these naturally processed beans. The whole cherry is then laid to dry on raised drying beds where it will take upwards of 3 weeks to dry down to +/- 11% moisture.
