About This Coffee

Last year, tasting this coffee at the farm in Colombia, we immediately knew it was something special. We are hugely excited to bring you El Vergel Koji: the newest addition to our Rarity Line. Since stepping into the world of coffee production, the Bayter family have been making innovative leaps at their farm. The koji process is the result of a special collaboration, promising a coffee experience unlike any other. After harvest, koji - an ancient fungus that grows on rice - is introduced to the cherries to aid fermentation. The koji breaks down pectin in the cherries and produces amino acid, resulting in incredibly deep flavour and distinct texture.
