About This Coffee
Juliana implemented a production agroecology that contribute to the preservation of the environment. The fermentation of the coffee begins as soon as harvest. The cherries ferment for 24 hours, before moving on to pulping which is done dry. The 2nd phase of fermentation is maintained for 60 hours. Finally, the coffee is lightly washed in retaining the maximum of mucilage and dried in the sun for 20 days.
