El Fabio is categorized as a honey-processed bean, but it actually has more of a natural process outcome than other honey-processed coffees. Its green beans emit a delightful fermented aroma that reminds you of wine. El Fabio is a particularly dense and thick coffee, so it needs to be roasted at a moderate temperature of 200C with a lowered air level to ensure that it absorbs heat effectively.
