This year's offering from Germán Carranza at El Bebedero farm in Gracias a Dios, Amazonas marks our third year working with this exceptional young producer — and this time, his singular Tres Cogollos varietal gets the washed treatment. Where previous lots explored more experimental processing, this washed expression lets the variety speak with clarity and precision, offering a cleaner, more defined window into what makes Tres Cogollos so remarkable. Tres Cogollos is a true genetic mutation of Bourbon, discovered by Germán on his own farm and named for its distinctive three-bud plant structure. It exists nowhere else in the world — and Germán is, quite literally, its originator.
