In the Aceh region, all the way in the tip of Sumatra, you will find the Koperasi Produsen Petani Kopi Gayo. This corporation with no less than 600 members is of paramount importance. Farmers only use natural materials to keep their coffee plants in top condition. To fertilize their plantations, they use composted sheets of the coffee berries. So not any chemicals! The special feature of this coffee is also its characteristic processing method and the taste that the coffee gets. After picking the ripe coffee berries, the coffee is processed according to the law hulled method. The term semi-washed or popular Giling Basah is also widely used. After picking, the outer shell is removed from the coffee and then left one night alone to be washed the next day. Instead of letting the coffee dry (washed method), the coffee is only dried for a few hours and then resold to the next link. The pulp stays on the beans for much longer and the moisture percentage remains very high. - The result? Of course you want to taste it! The law hulled method provides a very tasty, sweet coffee with a nice acidity, but also with a slight bitterness. We find it taste like dried fruit, like dried apricots and raisins, cocoa nibs and cloves.
