Keramo cherries are processed in the Keramo washing station. Keramo and Hamasho are our highest Ethiopian coffees, located at an altitude of 2360 metres. Washed Keramo is traditionally wet-fermented for 36 to 72 hours and then dried on African beds with clean plastic mesh and sheet for about 9 to 12 days to a moisture of about 10 %. The beds are covered to prevent excessive drying. I wasn't a fan of washed Ethiopian coffees at the beginning, but in recent years I've become more and more impressed. With delicate floral notes and the acidity of lemon, they are the ideal choice for both filter and light and acidic espresso.
