Coffee is a fruit that can be processed in its entire form (Natural), without its skin, pulp and mucilage (Despolpado Cherry) and without its skin, keeping the pulp and mucilage (Honey Process). The process of obtaining Natural coffee also goes through the washing phase, just like Pulped Cherry. The main difference is in the separation of the green beans from the cherries. In the Natural process, this separation is done manually, analyzing the coffee by its color, without removing the skin. As this process maintains the coffee husk during drying, the beans give rise to a fuller-bodied drink with a strong flavor.
