We are so please to welcome another fantastic and unique offering from producer Jairo Arcila! This our third coffee in the past year from the Arcila family to join our menu. With such commitment to growing and processing excellent coffee, Jairo Arcila is well respected within the specialty coffee industry. He owns and operates his farm Santa Monica in Quindio, Colombia. In addition to being well known for his co-ferment processing methods, he’s also well known for his care with unique varietals, like this one! This rare and unique Papayo varietal is most genetically common to Ethiopian heirloom varieties. It was named the Papayo varietal because of how much the coffee cherries look like tiny papayas. This coffee has similarities in the cup to a washed African coffee while still having a somewhat classic Colombia profile. This coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature controlled conditions until ideal moisture content was achieved. In the cup, we’re tasting notes of grapefruit, blueberry and vanilla. It is beautifully refined, balanced, sweet with a crisp clarity.
