About This Coffee

A well-dialed cup of Ayla Bombe Natural will immediately present with a very floral aroma, similar to the fragrance of roses. The texture of the coffee is soft and silky paired with tasting notes of raspberry lemonade and fresh strawberries. It’s a great example of exactly what you would hope for from a natural Ethiopian coffee. You can also expect a pleasant, lingering aftertaste that reminded me of strawberry syrup. This coffee brews toward the longer end of our time parameters. Don’t be afraid of cups that take around 3:15. Under-extraction on this coffee can come across as somewhat thin, leaning more towards a tea-like body than a silky one. You’ll also notice more lemon-like acidity without the sweetness of raspberries or strawberries to balance it out. If that’s the case, I recommend grinding a little finer for the next brew. Over-extracted cups of Ayla Bombe Natural had the slightly bitter and papery flavor classically associated with overextraction. It lacked both the brightness and sweetness of the well-dialed cups, and left a drying sensation on my palate. In this instance, I would grind a little coarser for the next brew.
