Spring is often considered as a new beginning and it's the season of carnivals too! From Brazil to Nottingham, Venice to Barbados, carnivals are the allegory on how different cultures can celebrate one same thing – Life. Thanks to the innovative mindset of our friends at El Vergel in Colombia, they were able to offer us a unique process not seen anywhere else. This Koji Natural process used a special yeast called A. Oryzae to trigger different chemical reactions during the fermentation, enhancing the Amino Acids, a big actor in Maillard reaction during roasting. The result is a balanced cup of coffee with a syrupy body, sparkling acidity and a round sweetness with notes of pineapple, dried mango, jackfruits, berries, white grape and florals.
