Complex and transparent, with great structure. Bright acidity with cherry, pecan and honey-like sweetness. Sítio Canaã, which translates to “The Promised Land,” is run by Kleumon Silva Moreira. For over a decade, Kleumon has worked alongside his mentor, Antônio Rigno, Antônio, who is widely regarded as the best producer in the region. The cherries were hand picked and pulped before being sun-dried in greenhouses with their mucilage still attached. The cherries were raked several times per day until the optimal moisture level was reached.
