Colombia's most special coffees are grown in the high altitude and volcanic soils of the Andes. From the volcanic Acevedo region in the south-west of the country, close to the border with Ecuador, this microlot proves how delightful Colombian coffee is. The breakthroughs of this field in quality coffee began 25 years ago when its owner, Heiner Lazo, was given it as a wedding gift to his future wife, Johanna. Instead of giving a single ruby ​​stone to his wife, Heiner preferred to give thousands of 'rubies', or ruby-colored coffee fruits, which gave the field its name. Heiner initially only grew Caturra coffees, but 3 years ago he started growing more exotic varieties, including Papayo, Pink Bourbon and SL28 plants. This lot, which is completely pink bourbon, is a hybrid of red and yellow bourbon varieties, and thanks to its high glucose content in its fruit, it gives the coffee a complex flavor profile. During the honey processing method, since the fruity layer of the coffee remains on the bean and dried, a very sweet, fruity and floral character emerges. The reflection of all these efforts on our cup is also very pleasing. When the coffee is ground, it offers aromas reminiscent of pumpkin dessert with its floral character. In taste, pumpkin dessert with a slight cinnamon touch is quite layered and surprising, with a feeling reminiscent of orange and butterscotch sugar. Enjoy your meal!
