This delightful anaerobic natural Colombian coffee is the third special release of the Pull & Pour Coffee Club. Java El Eden comes from the producers Elias & Shady Bayter and their farm, El Vergel. Java is a very rare variety in Colombia and is part of a micro-lot on the estate that has been one of the most exotic & has developed totally unique profiles. This specific coffee is processed with an extended anaerobic fermentation, using water in a unique way to stabilize the temperature during fermentation. If you tasted it without knowing it was an anaerobically processed coffee though, you would never think it was. The cup is decadent and complex, but also very clean without any of the over-the-top anaerobic fruit juice qualities.
