Those who are familiar with the old Grenadine, we can tell you that this one won't disappoint! This special Ombligon Edition from Nestor Lasso is delightful. Tasting notes of strawberry, cherry, raspberry and pomegranate. The original "Grenadine" was with the Sidra varietal. Nestor decided to stop the production of the sidra for a few years so he could only use the sidra cherries grown on his farm (which takes time!) and not buy from other producers to keep the taste of this truly special lot. This Ombligon edition is truly exceptional, it reminds us of the first harvest we had from the sidra. Extremely juicy with tasting notes of strawberry, raspberry, cherry and pomegranate. A full explosion of red fruits. This coffee has been fermented in sealed tanks for 48hrs. It has gone under a submerged fermentation with a mix of water and musts of coffee (these musts are from the previous coffee which has been carefully monitored to control the micro bacteria in it) and sealed for 38 hours. The coffee is then dried for 12 hours until 20% in moisture content is achieved and then stored in GrainPro bags for 2 days to stabilize the coffee. Coffee is then dried on drying beds for 15 days until 10% moisture content is achieved.
