ABOUT DON GALLEGO This coffee was produced by Juan D Gallego from Don Gallego (also known as Agroindustrias Gallego SAS), a coffee producer established in BelĂ©n de UmbrĂa, Risaralda. They focus primarily on the production of Castillo Rosario, Supremo, Wush Wush and Geisha varietals. ABOUT ANAEROBIC WASHED PROCESS The first step of the Anaerobic Wash process is to wash and separate cherries according to color by checking for ripeness. Then these selected cherries go through Anaerobic Fermentation for 18 hours. After the fermentation, pulped coffee is placed in a stainless steel bioreactor for a total of 62 hours. Every 12 hours, the coffee is washed with pulp juice that is 55 degrees in temperature.
