Amongst the rarest and most coveted of coffee varieties, the Pink Bourbon varietal is striking in every way - from the vibrant pink color of its ripe cherry to its bean’s uniquely sweet and complex flavor profile. This particular Pink Bourbon was grown at the innovative and sustainability-focused Finca Juan Martin in the Cauca Department of Southwestern Colombia. Juan Martin is a model farm, aiming to develop quality-focused cultivation techniques with a special emphasis on new and untested coffee varieties. It is one of the highest-elevation farms producing coffee in Colombia today; this distinction leads to a longer maturation process for the coffee plant, and more complex sugars in the cup. This delightful naturally processed lot is explosively flavorful, with notes of raspberry, stonefruit, and ruby chocolate.
