About This Coffee
From Testi Coffee's famous Huke washing station, we are ecstatic to offer this premium shade dried lot with a classic Yirgacheffe landrace profile. We believe it is primarily comprised of tiny and dense JARC seeds (possibly 74148 or 74158), but it is marketed as landrace. In the cup, we notice a strong floral aroma of jasmine, dominant berry flavor like steeped dried blueberry, a tropical acidity, and a mouthfeel reminiscent of white chocolate. This coffee launched on January 9th as part of Drop 5! This is a premium lot processed at the Huke washing station and handpicked by 600 smallholder Gotiti kebele growers. This coffee is premium because of the sorting and drying methods, which require extra attention. Testi Coffee owns a number of washing stations around Ethiopia’s highlands. They also commit a great deal back to communities they invest in through their initiative, Project Direct. This lot is labelled as Ethiopian landrace (a.k.a. heirloom), which implies it's any unclassified but native coffee variety to Ethiopia's forest. On inspection and taste, we have a hunch that it is primarily comprised of either JARC 74148 or 74158. These names come from the research labs they were classified in. Depulped 8 hours after picking. 36-48 hours of open container fermentation with mucilage. Washed until transparent and then dried in shade on raised beds for 5 to 7 days. We thought we had missed out on buying another Ethiopia from the 2025 harvest, but a late arrival from Hacea turned our heads. We had previously bought a Testi Coffee Aricha washing station lot through Hacea and loved it. This one was exciting to us because it fit the criteria of small, uniform, and dense. Being shade dried, it also extends shelf life. After tasting, we’re really happy we jumped on the last of this harvest. Green cost: $20.07/kg ($1.32/kg tariff) Package and roasting costs: $2.91/bag; $10/kg Profile and sample use: ~1.8kg Approx. Margin: 39.06% Resting: Wait 30 days for peak experience (degas the night before by opening bag for about an hour). We're impatient and think this has tasted high clarity as early as 20 days after roast too. We've primarily enjoyed this offering as a pour-over. Temperature range: 198-201°F Water: Tap/Demineralized and Third Wave Water Light Roast Grind Settings: Medium Coarse (800-850µm) Target Drawdown Time: 3:00-3:15 Simple 3 Pour Recipe: 1. 1/4 water for Bloom and wait 35-40s, swirl dripper 2. @40s: 1/2 water for body pour, swirl dripper 3. @1:40: 1/4 water for final pour (low agitation) Drops are typically prepared in two formats: a standard 100g / 200g bag offering at your preferred roast level or as a roast experiment. Note that roast level selection does not apply to experiments sent out. We work as quickly as possible to roast and ship your coffee within a week of your order placement. Times vary on roaster rental availability and our limited roasting schedule. We typically roast on two subsequent days twice a month.
