Stamp Act Coffee
Seattle, WA, USA
We aim to drink coffee with character and our decaf coffee is no different. We cupped "heaps" of decaf coffees in order to narrow down to a decaf coffee that is deliciously creative both as an espresso and or drip. This Colombian Desvelado Decaf hits the spot! This lot was constructed during a cupping competition (The Acevedo Cup), which held its inaugural event in the municipality of Acevedo, Colombia. Producers located in and around the hamlets surrounding Acevedo town delivered coffees and any lot that met the physical criteria and had a cup score of at least 86 points was accepted into the competition. Processing is done in traditional smallholder fashion — coffee fruit is manually depulped by either hand or rigged with motors, fermentation occurs in small concrete or tiled tanks and sometimes plastic buckets, then, washing is done in the same tanks. Parabolic dryers are common, though covered patios are found on occasion. Once processed green coffee is sent off for EA decaffeination. Coffee has been imported by the team at Red Fox Coffee Merchants.
