The Kelpie originated in Irish and Scottish folklore. A shape shifting spirit who lives in the dark waters of Scotland and Ireland, who appears as a black horse. It has been described in many different ways, it’s hooves are backwards compared to a regular horse, it has fins along it’s mane. This creature is regarded as a warning to beware the dark waters and not to stray towards them lightly. “He watched the wheeling eddies boil, Till from their foam his dazzled eyes Beheld the River Demon rise” So we made a dark roast, not like italian roast. It doesn’t get into second crack and isn’t super oily dark roast territory but it is dark and hits with a robust kick. We also decided to create this blend prior to roasting. We took two of our lovely South American coffees & blended them together. Pre-blending prior to the roasting process allows for these coffees to vibe off of each other, and they develop at different moments but together. We think we have created a very unique blend and have been able to achieve something new and different by doing so.
