The Cherry Reposado process (a first for our menu) is when the farmer picks the coffee cherries, and allows them to rest for a period of time before they are then depulped and processed through a more standard washed processing. This extra rest time in cherry creates unique and dynamic fermentation and oxidation that results in expressive fruit flavor. Not quite a natural, but a bit fruitier than a washed coffee. This lot comes from farmer Efrain Naranjo and their farm Santa Rosa. It's our first year working with them, though they reside nearby our existing partner farms in Costa Rica.
