We source several of our colorful micro-lots (86+ point coffee) from the Santa Barbara region of Honduras each year. This coffee comes from a group of producers doing incredible work and striving to achieve improved quality year after year. The lot is called Project Cabanas, or Proyecto Cabañas, for the group of farmers around the town of Los Planes, Cabañas in Honduras. These are smallholder producers with an average size farm of 2.5 hectares, working on high elevation farms reaching 1800 masl, and mineral-rich black soil. Many of these farmers are growing the experimental Lempira cultivar, ideal for the high temperatures and acidic soil they have here. This lot of coffee is also made up of Catuai, IHCAFE 90, and Pache. Alongside these coffee trees, the producers grow corn, beans, potatoes, cabbage, and carrots. Partnering with the export partner, San Vicente, enables these farmers to access better milling, education on farm practices, and most importantly prices well above the local price paid for coffee. The quality is in the cup, as traditional flavors are elevated to pleasing and surprising heights. Cherry is not an uncommon flavor in coffee, but each brew has undeniable notes of fresh, ripe Rainier cherry through the cup. The cherry is complemented by maple, vanilla, and comforting creaminess. Dial-into by starting with a 1:16 brew ratio, filtered water at 208-210℉, a medium grind, and a 3-3.5 minute brew cycle.
