Just like all other coffee beans from this rich coffee country, the Gayo Blue Mountain also has a typical Indonesian taste. The coffee owes this to the special way of washing the coffee beans. With normal washed coffee, the parchment (either pergamino or parchment) is removed when it is dry. In Indonesia this is not the case and the parchment is removed while the coffee is still wet. This is called giling basah and is unique in the coffee world. This is partly the cause of the distinct Indonesian taste.
