Beloved farm meets beloved coffee variety this week with our latest single origin selection: a uniquely complex Pacamara from the talented team at Hacienda La Esmeralda in Boquete, Panama. The Peterson family, owners & operators of Hacienda La Esmeralda, are well known for the rediscovery, separation, and popularization of Gesha variety coffee. Their new Pacamara lot is another entry in their long history of coffees of remarkable quality, given a light roast here at our roastery. Roasted & shipped from the Equator roastery every Wednesday Pacamara is a variety that is a cross between the Typica derived Maragogype, which produces very large beans, and Pacas, a compact-growing selection of the heirloom variety Bourbon. As a result of this parentage, Pacamara plants are small in stature but produce large beans known for their high cup quality and being notoriously challenging to roast.
