El Paraiso is a farm at 1900m In Cauca, Colombia operated by Diego Bermudez. They grow several varieties on the farm -Bourbon, Castillo, Laurina, and Geisha. Diego also operates the INDESTEC mill processing coffees from neighbor farms as well as their own. In 2018 El Paraiso's Bourbon washed entry to Cup of Excellence placed 10th. He has been producing some very interesting coffees of unique flavor profiles for the past few years with names like "Red Plum" and "Lychee" These are very aromatic coffees, but none are quite as intense and complete as the ones he's makes from the one he named after his daughter "Letty" Letty is produced from the Geisha/Gesha variety, but it taste unlike any other coffees from this variety. This coffee is double anaerobic fermented, but we aren’t certain that is fully the source of the astounding aromas in this offering and their other coffees. We have tasted many other double anaerobic coffees and have trialed dozens of variations on them along with hundreds of inoculations with dozens of strains of yeasts and bacteria in Hawaii. None has ever displayed flavors similar to these coffees. However trials with adding fruit flavored oils like Peach do produce a strikingly similar aromatic profile. Beyond just the amazing flavors this is a very full, sweet, creamy cup and clearly of excellent quality beyond just however the flavors were achieved, a coffee we are sure you will enjoy immensely.
